Double bonus Sunday cooking adventures: Oven roasted red potatoes

This is a very simple recipe for roasted red potatoes: Buy as many as you want (I bought 10 large ones). Preheat the oven to 400 degrees. Scrub and dry the potatoes. Cut them up into halves or quarters, depending on how large they are. Spray an appropriate size baking dish or pan. Put potatoes into baking dish with 1 teaspoon to 1 tablespoon of olive oil (I used 1 tablespoon since I had a lot of potatoes). Sprinkle with garlic powder and black pepper to taste. (if you use salt, go easy. Doesn’t take much.) Mix potatoes until coated with spices and oil. Place in oven. Cook for 20 minutes. Stir. Cook for 20 minutes. Stir. Cook for 20 more minutes. Eat! They will be crispy and brown with only a little bit of oil and no added calories from butter. Can you add butter? Yes, but these are so good without it you can skip it.
